Which head of broccoli would you choose?
If you chose the right hand side, you are absolutely right! You should always choose broccoli heads with very tiny firm green buds. The bigger the buds and the more purplish they are, the closer it is to bloom, thus the older and more fibrous the broccoli will be. The younger broccoli heads with tiny green buds are more tender and sweeter. Here are 4 other things you should look for the next time you are out shopping for brocolli:

- Make sure that the periphery of the broccoli head is green, firm and intact (not yellow or with broken/mushy bits)
- Check for black spots along the stem of the broccoli closest to the buds. This is an indication of worms (worm eggs).
- Check the bottom of the broccoli stem to ensure it is light yellowish-green, and not black or brown.
- The core of the broccoli stem should not have any cracks or hollow areas. This means the broccoli is old and fibrous.
